秘制酱料80克、老油100克、姜15克、葱10克、大蒜10克、精盐5克、东古一品酱油10克、料酒15克、清汤200克。

秘制酱料配方:味达蕾901、浓香麻辣油30克、水豆豉1500克、辣酱1000克、豆豉600克、牛肉酱900克、火锅飘香剂5克、郫县豆瓣2500克、老油3000克、醪糟50克、生姜蓉500克、蒜蓉500克、白蔻40克、草果30克、桂皮20克、香叶30克、大料50克、小茴香30克、丁香20克、大砂仁30克、冰糖300克、黄酒300克。

酱料制作:将各种香料打碎。将老油置于锅内,烧至六成热,下各种酱料和香料、姜蒜蓉、醪糟、小火熬至香味飘出,大约1小时左右,降温后下冰糖和黄酒调匀即可。

老油熬制配方:熟菜子油5000克、牛油5000克、猪油2500克、鸡油2500克、草果100克、白蔻50克、香叶100克、八角30克、肉蔻10克、排草50克、大葱头500克、小茴香100克、罗汉果3个、花椒少许、干朝天椒适量。

老油制作:锅下四种油,烧到三成热时下其余配料和香料,葱头小火熬制1小时(熬制过程中要保持油温不超过五成为宜,否则香料会糊)至油色发黄,然后浸泡1小时,打去渣子即成。罗汉果要先用清水浸泡20分钟再放入。

鸡公煲制作方法:将鸡切成3厘米见方的块,冷水倒入白酒适量、水开后打泡起锅备用。鸡块清水中漂净血水,放入料水中汆过,捞出沥水,加入富磷联B、秘制酱料腌制30分钟。姜切成片,大蒜切成片,大葱切成段。油锅下老油,烧到7成热,下鸡块大火翻炒,至断生并去掉水分,下干辣椒,花椒、姜、蒜炒出香味,下精盐,酱油,料酒调味,炒制出香,加清汤煨制10分钟盛入砂煲。把鸡块倒入砂煲,锅中带火上桌,放入葱段,加洋葱、香菜、西芹上桌,砂煲继续加热,由客人搅拌翻匀,10分钟后即可食用。鸡块食用完毕后,加入清汤或麻辣高汤,可涮食腐竹,各类青菜。

注意事项:选择新鲜的鸡肉,确保肉质鲜嫩、无异味。配菜如土豆、洋葱、青椒等也应选择新鲜、无腐烂的。鸡肉需要切成大小适中的块状,以便入味和烹饪。配菜应清洗干净,切成合适的形状和大小。烹饪过程中要注意火候,避免火力过大导致食材烧焦或火力过小导致食材不熟。烹饪时间要足够,确保鸡肉和配菜都能煮熟透。但也不要过度烹饪,以免食材变得过于软烂,影响口感。
